They basically cut out alot of the clutter, extra wiring and this in-turn cleans up the bay for esthetics.

It also makes it a lot easier to work on stuff in the bay.

Oh I thought you mean who? You meant how. Big world of difference. I thought they always leave the wiring harness through the factory hole of the firewall. I've never done this so I wouldn't know much. Last time I read on "wire-tucking", people simply extend or modify wiring harness like you mentioned...but nothing to do with the firewall.
